Scones

I did a lot of cleaning and shopping and washing today. I did my shopping by bike in the morning and by the afternoon it was miserable outside. There were some clouds and it felt like a sauna. I rode up to the store in the late afternoon for a few things and it was so hot.

I had started craving scones, though and I didn't feel like paying a couple bucks for one. What I especially wanted were orange scones with raisins, so I searched the internet till I found a bunch of scone recipes. Basically they're sweet biscuits with flavoring so I used a biscuit mix, added a bit of sugar, some grated orange peel and raisins. They were good. Below is the recipe.

Orange and raisin scones:

2 cups Jiffy Mix
2 tbsp sugar
1 egg
1/2 cup milk
1 tbsp grated orange rind
1/2 cup raisins

Mix Jiffy Mix, sugar, orange rind & raisins. Mix together milk and egg and add to dry mix. Mix well and drop onto ungreased baking sheet. Bake for 10 minutes at 400 degrees. Cool on rack.

They were good, not as sweet as the ones you buy, but I don't like them too sweet. It did need just a bit more shortening though. Maybe I'll try a couple extra tablespoons of shortening next time. Maybe almond next time. Yum and so easy.

I also watched a couple old war movies. They seem to be showing all the old Pearl Harbor movies, I guess because it's Memorial Day and maybe because the new Pearl Harbor movie is out this weekend. I'm thinking I might brave the heat and go see it tomorrow though I do think a three hour movie is a bit much.

I was going to get some reading done but the day seemed to get away from. That's ok, I feel very relaxed right now and knowing that I still have two days is a wonderful thought.
