New Potatoes and Red Bell Peppers

I've been home sick today, and am still functioning in a haze but between sleeping, sort of looking at the internet and not wanting anything to eat, I've been reading recipes. Yeah! I like reading recipes, even when I don't want to eat anything. It's not like I'm really doing anything so I decided that I need to write some kind of journal entry so here's a favorite recipe of mine:

    1/2 lb small red new potatoes (4 or 5), quartered
    1/2 small red bell pepper, diced
    1/2 tsp rosemary
    1/2 tsp caraway seeds
    1 tbsp olive oil
    2 tsp red wine vinegar
    1 green onion, sliced
    1/4 tsp salt
    1/4 tsp pepper
    Boil potatoes till tender, about 15 minutes. Drain all but 1 or 2 tbsp water and add the rest of the ingeredients. Toss, cover and cook over very low heat for 5 minutes. Oh yummy! I actually leave about 4 tbsp water as it makes a nice sauce when you mash the potates and pour it over.
    2 servings.

    Ok, that's enough for today. Now for another nap.
